The Food Truck opens at 11:00am with an extensive Lunch/Dinner Menu that has something for everyone's taste. Our all-natural offerings highlight our Gourmet Grass Fed Beef in Chef-created Mountain Sliders. Favorites include the spicy ‘Wolf Creek Break Burner’ and the Reuben made with bacon-like pastrami. The Winey Gringo features Davie’s own barbecue sauce — whipped with a heavy dose of cabernet wine — and topped with cheese and grilled onions.
Wraps are stuffed with fresh veggies and mixed greens, and offer chicken or veggie options. Sandwhiches and other seasonal items make evident the creative spirit of our Certified Chef, Rachel Davie.
We aim to serve all local foods. Our beef comes from Rachel's grass-fed cows raised right here in the valley. Our potatoes used to create delicious sides were grown in nearby Center, CO. And all of our other meat comes from Scanga based out of Salida, CO. Here at Rachel's we believe that farm-to-table is the healthiest way to go.
